Chili Level - Moderately Hot
What makes this the ultimate pork rub? I use a simple blend of herbs and spices, so there is a lovely balance between the gentle heat and the sweetness in the rub. This all combines wonderfully with the glorious flavour of pork, whatever cut you are cooking (usually for me it is pork neck or pork scotch).
You can also use this rub on anything chicken. I love it on wings on the BBQ, or use generously on a free range chook and roast it in the oven – beautiful! It’s great to spice up fish fillets or add a little zing to scallops, haloumi or even tofu burgers cooked on the BBQ! It goes without saying that this rub on a rack of ribs cooked to perfection is one of life’s simple pleasures. Enjoy.
